I have 3 Big Hauler locos. One with the volume control/off switch and two without. What happens to the battery if I leave it in the tender when not using the locos? Will it go dead? Is there a constant draw?

No.
I've left the battery in the tenders from time to time, and it can last months in there.
The only time it should draw power is when it's connected to a locomotive while the loco is running on the track.
.
Whenever a battery is involved in a 'toy' of any sort, and it is not going to be used for a while, I will always remove the battery just to be safe.
Nothing worse than finding that green fuzz on the contacts when you find the battery is dead!

no issue. if you're worried, turn the switch on back of loco next to the plug off. if that's broken, unplug the wire.
