As far as i know—at least for “non-kit accucraft” locos,—no such diagrams were created. Some may have created by end users who felt the need to get a more detailed understanding of their engines. You could specify an engine where you would like to see a detailed engine doc and see if one was created.

Jim,
Since you have this discussion in the 'Live Steam' forum, I assume that is all you are interested in.
The kits that Accucraft produced in association with Aster do of course have their assembly drawings.
I assume that those locomotives that were made just by Accucraft as ready-to-run do not have the same documentation, although one would assume that those in the factory assembling them must have had something similar to follow.
Did the Ruby kit have drawings?

I personally am looking for exploded views on the 4-4-0, Mason Bogie, and Ruby, but it would be nice to know if others existed.

No views like that were ever made public from Accucraft for anything other than a Ruby kit. While they may have drawn some assembly drawings for the productions as I have seen some in the past none were ever made public nor are they full detail as you are hoping.
